  • 5 ounces trimmed asparagus

  • 4 ounces cubed ham

  • 2 teaspoons minced garlic

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 1½ cups 2% milk

  • 6 light Laughing Cow cheese wedges

  • 1 ounce Swiss cheese

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • Small pinch of paprika

Instructions

  1. Cook the cauliflower Steam or microwave according to the package, then pour into a lightly-greased 9x13 casserole dish.

  2. Blanch the asparagus Boil in salted water for 3–4 minutes, strain, and add it to the cauliflower.

  3. Make the sauce In a saucepan over medium heat, melt the butter. Add the garlic and let it cook for about 20 seconds. Whisk in the flour, then drop in the Laughing Cow wedges. They’ll look clumpy at first. Let them warm and soften for 2–3 minutes.

  4. Add the milk Slowly whisk in the milk. Bring to a gentle boil and stir until thick and creamy, about 3–5 minutes. Season with salt, pepper, and paprika.

  5. Assemble the casserole Pour the cream sauce over the veggies. Add the ham and mix everything together.

  6. Top it off Grate the Swiss cheese over the top.

  7. Broil Broil on high for 4–5 minutes, or until the top is golden and crisp.
